Tlayudas are large crispy tortillas, made from hand-ground native masa (corn dough), cooked on a wood-fired clay platter (or comal) and normally served with Oaxacan mozarella-style cheese, avocado, tomato, and charcoal-grilled beef.


Either on your way out or on your way back along the "Ruta Ocotlan", Restaurant Azucena Zapoteca is your best option (if not your only option!) to stop for a break, sample a local dish, or just have a glass of cool freshly squeezed lemonade.

We know it's a jump of faith to eat in a new restaurant on a highway outside of town in Mexico. Relax. The food in this place is great.

Our son and daughter-in-law, who wrote the book on Oaxacan Woodcarvings, took us here in December of 2004. We each had a different dish and they were all excellent.
